Chicken Wings

I moved to New Jersey several years ago from Buffalo, NY. The past couple of years I've lived in Edgewater and I've never found a decent place to get chicken wings. I'm not talking wings slathered in gooey barbeque sauce, encased in breading, undercooked and lightly dipped in what passes as a hot sauce, or covered with various herbs and spices. I'm looking for nice big wings, with the outer skin crisp and brown from month old grease, soaked in a nice hot sauce (preferably made at least from cayenne peppers).
If anyone knows a) what I'm talking about in terms of authenticity, and b) can tell me where to score some.... I'd surely be grateful.
